Ingredients
- 2 slices sour dough bread
- ½ ripe avocado
- ½ ripe pear, quartered, cored and sliced
- ¼ cup baby rocket leaves
- 20g shaved parmesan
- lemon wedges and chopped walnuts to serve
Method
- Lightly toast the sour dough bread if desired.
- Roughly mash the avocado.
- Spread onto each slice and season with a pinch of salt.
- Top with slices of pear, rocket leaves and shaved parmesan.
- Grind over black pepper and serve with lemon wedges and a sprinkle of walnuts.
