Pear, avocado and rocket bruschetta

  • 2 slices sour dough bread
  • ½ ripe avocado
  • ½ ripe pear, quartered, cored and sliced
  • ¼ cup baby rocket leaves
  • 20g shaved parmesan
  • lemon wedges and chopped walnuts to serve


  1. Lightly toast the sour dough bread if desired.
  2. Roughly mash the avocado.
  3. Spread onto each slice and season with a pinch of salt.
  4. Top with slices of pear, rocket leaves and shaved parmesan.
  5. Grind over black pepper and serve with lemon wedges and a sprinkle of walnuts.
