Recipe for one: Apple fritters

Preparation: 15 minutes

Cooking: 20 minutes

Serves: 1

Ingredients:

  • 1 small egg
  • 1 tablespoon milk
  • ⅓ cup self raising flour
  • 1 small red apple – skin on, grated or diced
  • Pinch of cinnamon
  • ½ tablespoon olive oil
  • Cinnamon sugar

Method:

  1. Combine eggs and milk in a bowl.
  2. Beat well.
  3. Stir in flour, cinnamon and apple.
  4. Heat oil in a non-stick frying pan.
  5. Cook spoonfuls of mixture on each side until golden.
  6. Drain on absorbent kitchen paper.
  7. Sprinkle with cinnamon sugar.
  8. Serve immediately.
