HUEY’S PERFECT STEAK, NICELY GARNISHED
(serves 2)
INGREDIENTS
2 X 250gm Porterhouse steaks, well trimmed
4 large Field (Portabello) mushrooms, peeled & stalks removed
olive oil
4 thyme sprigs
sea salt & freshly ground pepper
butter
2 medium-large roasting potatoes, well scrubbed
2 tbsp chopped fresh herbs
1 plump garlic clove, crushed
1 small red chilli, finely chopped
6 cherry tomatoes, quartered & then halved crossways
red wine vinegar
olive oil spray
METHOD
Preheat oven to 200°C.
Take the steaks out of the fridge 30 minutes before cooking.
Put the mushrooms in an oven tray. Drizzle with oil, add the thyme and seasonings and dot with butter. Bake until tender.
Boil the potatoes until just tender. Then cut into thickish slices. Brush with oil, season generously and cook on a preheated BBQ or ridged grill until well marked and tender. Keep warm in the oven.
Toss the chopped herbs, garlic, chilli and tomatoes in a bowl with ¼ cup oil and red wine vinegar and seasonings to taste.
Then oil the steaks generously and season. Place on the barbecue or grill and cook, turning two or three times until cooked to desired degree. Remove and rest for five minutes in a warm spot.
When ready, serve the steaks with the mushrooms and potato planks, and the sauce in a bowl alongside.
