The arrival of spring signals the return of one of Western Australia’s most anticipated seasonal delicacies: Albany Rock Oysters.

Harvested from late October, these premium oysters from Leeuwin Coast are once again reaching restaurants, seafood markets, and dining tables across WA, and nationally, just in time for summer menus, entertaining, and festive celebrations.

Grown exclusively in the nutrient-rich waters of Albany’s Great Southern coastline, Albany Rock Oysters are increasingly recognised as one of Australia’s most refined oyster varieties. Tasting of gentle sea spray brine with grassy undertones, they are bright and balanced, offering a hint of watermelon rind and cucumber — making them the perfect summer oyster. It’s this unique provenance that gives the oysters their character and underpins their growing reputation nationwide.

The oysters, which won three gold medals at the 2024 Sydney Royal Easter Show, continue to gain traction on high-end menus nationwide.

Kim Brennan, Group Executive Chef of Fiveight — whose venues include Cooee, COPIA, Cape Lodge and Indigo Oscar, is among those championing Albany Rock Oysters this season.

“They’re clean, bright, and beautifully balanced, everything you want in a summer oyster,” says Brennan.

“We love using them across our venues because they let the produce speak for itself, while still allowing for creative pairings and seasonal touches” he adds.

Harvested from November through April, Albany Rock Oysters are delightfully seasonal, and this seasonal availability only adds to their appeal.
